Peanut Toffee Cookies

Cookie Day (night that is) update as promised:


Peanut Toffee Cookies



Ingredients:
2 1/2 cups flour
2 tbs ground flax seed
1 tsp baking soda
1/4 tsp salt
Sprinkle of cinnamon

3/4 cup margarine
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
1 cup hot water
1/3 cup bran cereal

1/3 cup toffee bits
2/3 cup peanuts
2 tbs sunflower seeds


Directions:
1. Preheat oven to 350*
2. Mix the dry ingredients and set aside
3. Beat the margarine and the sugars, add the vanilla and eggs. Once combined fully add the cup of hot water and the cereal.
4. Mix the dry ingredients into the wet.
5. Add toffee, peanuts and sunflower seeds
6. Drop by spoonfuls onto baking sheets and bake for about 10 minutes

Music Monday

Taking the recommendation from my friend josh today, M83 is the artist of the day for this week's Monday music; So if you need to know, that is what is currently playing this very minute. Listen to them, i hope you like. 


Things are starting to settle which is good. This weekend was filled with both work and play, meeting my weekend work days for the month Saturday, and then birthday celebrating and catching up with HS friends with plenty of sleep in between. 


This morning i woke up rested and feeling much better than I have been, after getting a solid 10 hours of sleep last night. Such a wonderful thing. It's been a struggle for me this past month and disciplining myself to get the rest that I need. 


Mentally, I am also trying to discipline myself to hopefully find more peace and rest for my restless brain lately. It's usually the reason for my lack of sleep trend lately. 

Romans 12:2 is my verse for August;

"Do not conform to the pattern of this world, but be transformed by the renewing of your mind. Then you will be able to test and approve what God’s will is —his good, pleasing and perfect will."


Trying to find rest in sleep alone has not been working for me, and I know this is the solution. I have complete faith that once i take the time daily to separate myself from the literal world, life will fall into place and my mind will no longer be non stop and restless. I'm hoping I can take this last month of summer, and its beautiful days to fully renew my mind, taking time away from the world and its distractions. I also now have much more of God's creation right in my own backyard, and I need to take advantage of that. 

I will keep you updated, I should have some time to really get outside this week = love. 



p.s. Way overdue cookie day today :) (after work) so look forward to that.

Back from Hiatus

Between the month and few days time away, here are some updates;


- I am no longer a resident of Danbury, CT
- I am now a resident of Farmington, CT
- (I still have the same job) new location
- I moved back home with my parents
- I do not know how long this will be for
- I am now 23 years old.




I apologize for being away, but living life between two places has paid a toll on my energy  the past month. I am now officially all moved back though, so hopefully I will finally be finding my time to adventure and rest the remainder of this summer. Enjoy.

num num num. i think i'm going to keep this recipe secret for a little, while i continue to experiment this summer with different flavors. (i will tell you though they are really red white blue with cranberry blueberry and coconut). So i am not lying.

i will gladly share the food art pictures with you though :) enjoy.
