Best Cookies Yet

Oatmeal Pecan PB Chip Cookies

These were birthday cookies created and sent to PA for a dear friend, who's absolute favorite is pecan pie. That's a little difficult to send in the mail. So you make due with what you got. I was pleased with the result.


Ingredients:
1 1/2 cup flour
1 tsp salt
1 tsp cinnamon
1 tsp baking soda
1/4 tsp cloves
1 cup oats

1/4 cup butter softened
1/4 cup applesauce
1/2 cup white sugar
1/2 cup brown sugar
1 tsp vanilla
2 eggs

2/3 cup PB chips
1 cup Pecan pieces



Directions: 
1. Preheat oven to 350* degrees
2. In a large bowl combine the first set of ingredients and mix
3. In a larger separate bowl combine the butter, apple sauce and sugars.
4. Add the vanilla and eggs to the butter/sugar mixture and combine thouroughly
5. Add the flour mixture to the wet ingredients
6. Add the PB chips and pecan pieces
7. Bake for about 10 minutes on parchment paper


Makes about 3 dozen cookies, depending on size.


These were definitely my best yet to date. So i strongly encourage you to make.

Happy Thursday.
Hope you're having quality thoughts today. 



But, one of my latest music obsessions and what has been fueling my runs the past few times is Cake. So today, I share the video for "Long Time". Again as always, enjoy. The song's just got a sweet beat.

Another all day work day, so I'm beginning my morning with a little fun day blogging. 
No workout post this morning due to the fact I went out for a run around the woods of the valley after work yesterday, and didn't come back until ten miles later. Once I got outside I realized all i really wanted was to stay out as long as possible, so i did....now today is more than an off day. 

I came back home last night with intention to bake bread or something, but decided I wanted nothing more than to literally crash on the couch and not get up, for anything. So, I ended up watching the Xfactor with Mom. (I'm trying to think right now when the last time I watched TV for an hour straight was, and I want to say it is definitely months.) 

I have to say I thoroughly enjoyed though. The quad of judges make a good team together and I realized I missed S.Cowell's speaking of the mind. I also did not expect it to get as emotional as it did. But the girls making it through at the end of the show all have my votes. Fighters. I'm rooting for the next young Pat Benatar. Her hidden rocker sass was out of this world. It's on again tonight, I don't know if I'll be around to watch but if you are I definitely recommend. 



That's all i got right now, recipe posting for another cookie made the other day later on.
maybe i'll have some more quality thoughts later on too. But just fun morning thoughts as of noon.

Banana PB Chip Cookies

Banana PB Chip Cookies
made for the newest member of the LU CT family, in norwalk. tlc.

his favorite color is very specifically "colonial" blue. so that explains my color choice.




Ingredients:

~2 cups flour
1/4 tsp salt
1/2 tsp baking soda


1 1/2 sticks butter (softened)
1/3 cup white sugar
1/3 cup brown sugar
1 banana mashed
1 tsp vanilla
1 egg beaten


2 bananas diced
3/4 cup PB chips



Directions:
1. Preheat Oven to 350 degrees
2. In a large bowl combine flour, baking soda & sat
3. In a separate bowl, cream the butter and the sugars together
4. Add the vanilla and beaten egg to the sugar/butter mixture
5. Add the mashed banana the ingredients in step 4
6. Stir the flour mixture into the wet ingredients
7. (i added blue)
8. Dice the bananas, add them and the PB chips
8. Bake for 8-12 minutes

I'm holding down the fort and working open to close all day today and tomorrow so I gotta keep my spirits up somehow. Thank you for humoring me and my thrilling life. 



But as our dear artist of the day sings, "keep your eye on the prize" - almost a month until half marathon day, so i'm keepin on keepin on. 

This morning's running workout;

4 min jogging warm up - 8.0 speed
5 miles @ 34:10 (speeds 7.7~10.3) interval-ing whever i felt the desire.
.50 mile jogging cool down

20 min cross train
10 min ab circuit


I think that may be a PR for 5 miles, i'm pretty sure. I realized later this morning that a half marathon is a long distance and that I should probably focus on getting the distance down again first, so I'm thinking 8 or 9 miles in a few days. If anyone would like to join, please let me know :)




But, yes, happy Monday Morning. Enjoy the sunshine and the cool fall weather that seems to be sneaking in. What a wonderful thing it is.

ekklesia of people

if the Church is the people, and people are everywhere, wouldn't that mean that church is everywhere?

that's what I'm thinking.

worth getting your feet wet.

Today I went hiking at Enders Falls in Granby. 


All I will say is that every jump, slip, climb, and steps through these rocks and waters were worth it;
even the $100 to buy a new phone on the way home because mine unfortunately had a horrific drowning accident....RIP
