Leap Day

Happy Leap Day!
To be honest I'm not even sure what the whole leap day/year thing is, I'm gonna research later, my learning for the day I suppose.


It's snowing! 
Barely, but it is. Apparently 3-5 inches by tomorrow (hoping!) so we'll see. But right now there are definitely white flurries falling right outside my window. Perfect morning off, with cloudy skies, snow, and THE BEST winter white tea. I've been battling a cold for quite some time now, (almost turning to think it was mono after a much depleted energy day yesterday) but got out of work at 9 last night, took some nyquil and was out by 10:30. I woke up feeling much better - not the best, but better is a step. 


Since the registration site for the Broad Street had some technical difficulties the first day of sign ups, I did not get through (it filled the 30,000 runner cap at 3pm that afternoon!) crazy. I entered an additional lottery for another 2,500 runner but was informed on Monday I did not get into that either....bummed. As a consequence I am taking a few days off from running. I ran my fastest pace (under 7min) during my 5 mile run Sunday morning finishing in 34:27, but since I no longer have something to train for I'm going to take it easy this week and next and stick to cross training. 


Bike workout
15 minute intervals: (levels 6-9)
1 min sprint/1 min rest alternate for 5 min
30 sec sprint/3 sec rest alternate for 5 min
1 min sprint/1 min rest alternate for 5 min


Leg press 120 lbs 15 reps x3
Calf raises on leg press 90lbs 10 reps 3 way x3


45 minutes on the bike random hills (levels 6-12) ~11.5 miles




We'll see how I am tomorrow. So far so good. 
Off to work, lax is life.

Today is my last day off until Easter, I'm hoping on my faith to help through this mentally and physically to not burn out. I am excited though for the season, and using today as a complete rest day. And after these next three months I have no idea what is in store for me. i love it.

PR pace

This morning i woke up and ran 6 miles. In 42:15. 


This is my fastest pace yet for anything over a 5k so saying i was pretty pumped may be an understatement. After a somewhat restless night (a trend lately) I almost turned right over and kept on sleeping when my alarm went off, but i then remembered my great find yesterday and all i wanted to do was put my new sneaks on. So I did, and I ran. I really hope I have a reason to be pushing myself. Having something to train for is so much better. After a crashing website for the Broad Street all day during registration, it was closed by the time i finally got through. I'm in the lottery though for more applicants, and we're all praying I'm in. Let's hope. 


I then ventured over to farmington to my parents house to hang out with this lil guy:



This is my nephew Braden Scott. (Middle name my suggestion) :) and is the son of my twin sister Katie. I will share their introduction at some point I'm sure. But yes, Braden will be turning 2 next month, and since I will be missing his special day due to lax season, I had to get my fill of him before work steals my life away for the next two months. 

Our day consisted of sticking my play-doh snakes to the window, reading Clifford and Spot books, and playing his drumset of pots and pans. He is also finallyyy speaking (DMC's not too far away!) which was pretty entertaining. Daddy and hot were the top runners in his vocab for the day. Nonetheless a fun day, even did some baking. (Of course). 


p.s. My skis did not come back to danbury with me...maybe next year, wherever i find myself living.

Oatmeal Butterscotch Cookie Dough Bites

Oatmeal Butterscotch Cookie Dough Bites

Ingredients:
1 cup oats
1/4 dry roasted almonds
2 TBS ground flax
2 TBS almond butter
1 TBS natural peanut butter
1/4 cup maple syrup
1/4 tsp almond extract
1/4 tsp vanilla

1/3 cup butterscotch chips

Directions:
In a food processor combine the oats and the almonds and grind until they are finely blended. Add the flax, almond & peanut butters, syrup and extracts. Continue to mix via the processor, pausing to stir and re-set the dough until it is mostly combined. Next transfer the mixture into a large bowl and stir/knead until completely mixed. Fold in the butterscotch chips and roll into balls. You can either bake them for a little (350* for about 8-10 min) or put them in the refrigerator - i do the latter.

Sunday Funday

Today, I woke up at 11:30.


Bought these:
(Laces via lacrosse unlimited of Danbury)



Watched some Sunday Lax while drinking coffee, (Denver vs. OSU and Navy vs. Jacksonville).

And made this:

Carrot Ginger Banana Bread

Ingredients:
1/2 cup white whole wheat flour
1/2 c. oats
1/8 c. ground flax
1/2 tsp. baking powder & soda
1/4 tsp nutmeg, allspice, cinn
1/2 tsp. ginger
pinch of salt

1/3 c. white sugar
1 TBS agave nectar
1/8 c. + 1 TBS oil
1/2 tsp vanilla
1 4oz jar of carrot baby food
1 egg beaten
1/2 banana mashed 

Directions:
Preheat oven to 350*. Mix the dry ingredients (first set) in a medium bowl. In a larger bowl mix the wet ingredients (second set). Stir the dry into the wet, and pour into the bread loaf pan. I sprinkled with more ginger and cinnamon sugar, aka "potion" in the Mac family. Bake for 40 min (about). 

I took a nice little picture of a slice with my coffee but it isn't being received from my computer :( maybe i can update in a little later. 


(is it sad that all i want to do is go to bed so i can wake up and run in my new sneaks?)...

Miraculous medley of Whole Wheat Shells, Pinto Beans. Peas, Brussels Sprouts, Alfalfa Sprouts. Topped with olive oil, black pepper and cubed/chopped cheddar.

Mango Banana Chocolate Chip Bread

Mango Banana Chocolate Chip Bread
This was made for a very special couple in my life :) to be shipped tomorrow. 


Ingredients:
1/2 c. white whole wheat flour
1/2 c. oats
1/8 c. ground flax
1/2 tsp. baking powder & soda
1/4 tsp. nutmeg
1/4 tsp. all spice
1/4 tsp. cinnamon
pinch of sea salt


1/4 c. white sugar
1/8 c. brown sugar
1 4oz jar of Mango&Apple baby food
1/8 c. + 1 Tbs oil
3/4 mashed banana (stole some) :)
1 egg


1/4 c. chocolate chips


Directions:
Heat oven to 350*, Mix the dry ingredients (flour through salt) and set aside. In a larger separate bowl, mix the sugars, baby food and oil. Beat the egg and add, mash the banana and add that as well. Stir the dry ingredients into the wet and then fold in the chocolate chips. Bake for 45 minutes.


Final Product:

lazy legs

I really have no desire to move my legs at all for the remainder of the day. It's raining out so staying here and drinking coffee for the remainder seems okay by me. Anyway, I said I'd maybe go gourmet for dinner last night, I don't think I accomplished that but here's what i got. Feel free to add to the quick fix dinner ideas, it's simple.


Parmesan & Black Pepper Chicken (with rice&barley and peas)


1 Chicken Breast grilled with seasoning, garlic and black pepp, finished w/ parm
(via Foreman Grill)


For the rice & peas:
1 cup left over rice & barley mix
2/3 cup peas
1/4 tomato sauce
Garlic
Black pepper
Sea Salt
Directions: Combine and heat in a small saucepan until warm


Served over a handful of Spinach and Sprouts. And a glass of blueberry & pom sparkling water. Sweet & Simple.

Good morningg.
THE BROAD STREET REGISTRATION OPENS TODAY! (right now, 10am) :) :)


One of my best friends Kara and I have been waiting for this for months. We both studied in Philly for some time, and she is living and working right outside the city now. Philly deff stole our hearts. I'm trying to load it right now, but it's superr slow probably due to that face there are so many people trying to sign up all at the same time. Hopefully at some point today I can get it working and put in my name :) training started yesterday with a leg lift. Today to give my legs a break was arms.


Bi's and Tri's workout:


Superset #1 (3x alternating)
Bi-Curls (15lbs 15 rep)
Tri Kickback (10lbs 15 rep)


Superset #2 (3x alternating)
Hammer Curls (10lbs 15 rep)
Tri-Dips across benches (10lbs disc 15 rep)


Superset #3 (3x alternating)
77's (bar +5lbs)
Tri Extension (overhead) (20lb 15 rep)


In between each set was the lower back extension with 20lbs, and finished with 30 min arc trainer and short abs. Tomorrow is run day #1 :) 7 mile maybe?


Working today till 6, maybe ill be gourmet tonight for dinner and keep you updated. We'll see what i can do.

Baked Oatmeal Bars

Baked Oatmeal Bars
all natural and perfect for the health conscious :) 


Ingredients:
1 1/2 c. rolled oats
1/2 cup chopped nuts (walnuts
1/2 cup dried fruit (i used blueberry infused cranberries)
1/4 cup any seed (sunflower)
1 tsp cinnamon
1 tsp sea salt
1.25 c skim milk
1 egg
1 tsp vanilla


Directions:
Preheat oven to 350*
Mix the dry ingredients
Mix the wet ingredients
Mix the dry into the wet ingredients and stir
Line a 9 inch cake pan (or 9x9 pan) with parchment paper or spray with cooking spray
Pour the batter into the pan and bake for about 40 minutes
Let cool and cut into bars
Enjoy :)

Waffle Wednesday

Happy February 1st! 
And I'm pretty pos, we're just skipping right over winter this year, which is bumming me out a little because i was super excited to be moving back up north with the snow away from the PA rain...things could be worse i suppose.


Anyway, it's my mini mid-week weekend (with today and tomorrow off) so that's always a push for better spirits. I was planning on going home to my parents' today to have playday with my sis and nephew but they unfortunately got a flat tire this morning...I have officially reached 19,000 miles on my wonderful black beauty in 6 months, so i figured I'd save some life on the poor guy since i'd be there by myself with my parents at work all day. Instead I'll embrace Dan for the day :)


Morning workout: Days off Long Runs (better for me to do on days off so i don't loose patience and get tired at work) p.s. Broad St sign ups start today


On the tread:
4 min warm up
6 mile run @ 42:28 
3 minute jog


20 min elliptical (lightly of course)


And for breakfast:


Pumpkin Protein Waffles 
I usually make these into pancakes but since it is Wednesday, i thought id do the waffle honor


Ingredients
1/3 c. complete pancake/waffle mix
1 scoop vanilla protein powder
1/4 c pumpkin
pumpkin pie spice
1 TBS ground flax
1 TBS wheat germ


topping
Molasses
Go Lean Crisp Cinnamon Crumble (their newest!)






(the best for after workouts)


Time for laundry, baking & coffee drinking i suppose. maybe i'll venture downtown.
